Snowy Soup

Ingredients:
1 head of cauliflower
a piece of celery
bay leaf
white pepper
Asafetida
Himalayan salt
beetroot for decoration

 

Preparation:
Cook the cauliflower steamed with celery and bay leaf. Remove celery and bay leaf. Put cauliflower, part of the resulting broth, white pepper, Asafetida and salt in a blender and whip up to fine homogeneous mixture.
Decorating Idea: Cut with a sharp knife or grater pieces of beetroot thick about 1-2 mm. With cutters or sharp knife cut out stars and moons. Dry for a while on baking paper at low temperature in the oven or in a dehydrator. Carefully arrange "starry sky" in each serving.
