Caldo Verde

6 medium potatoes
250 g kale
1.5 liters of water
1 bay leaf
2-3 black pepper (optional)
asafetida (optional)
Himalayan salt


Cut potatoes to big pieces. Cook them steamed for about 15-20 minutes until they soften well. From the cooked potatoes make a fine paste by hand or using a press. Mix the puree with water and mix well. Add spices and put on the stove to boil. Meanwhile, cut the kaleto very thin slices no thicker than 2-3 mm and add it to the boiling soup. Allow to boil until the kale softens. Instead of kale you can use spinach, rhubarb, mangold or other leafy green.
Caldoverde soup is traditional Portuguese soup and translated means green broth.
