Ingredients:
Amount to 4 servings
200g white beans
100g carrots, finely chopped
50 g celery into small cubes
4 red peppers, roasted and coarsely chopped
100g tomato
½ bunch fresh mint
½ bunch parsley
1 g Himalayan salt
1 tablespoon brown sugar
Spices:
1 tsp fenugreek
1 tsp paprika
1 tsp mint
Preparation:
Wash very well and soak the beans for at least 12 hours. When the water boils reduce the heat so that the water slightly simmers. After half an hour, add vegetables and spices without tomatoes and fresh parsley. When beans is cooked you can puree 100 ml of the beans and add it again. This will make the soup thicker. When the bean is cooked remove the pan from the heat, add the tomato without peel, cut into small cubes. Then the salt, sugar and fresh parsley.
