Gingerbread Cookies

Ingredients:
Quantity for 12 cookies
250 g einkorn flour
70 g brown sugar
1 level tsp baking soda
1 tablespoon molasses (or other sweet syrup as agave)
1 tablespoon carob flour

 

Spices:
1 tsp dry ground ginger
¼ tsp spices for gingerbread (cinnamon, cloves, cardamom)

 

Preparation:
Mix all dry ingredients: 250 g einkorn flour, 70 g brown sugar, 1 level tsp baking soda, 1 tsp molasses, 1 tablespoon carob flour, 1 tsp dry ground ginger, ¼ tsp gingerbread spices (cinnamon, cloves, cardamom).
Mix the ingredients well and add water.
Knead to give a soft dough.
Shape from the soft dough small cookies and place them in the pan on a baking sheet.
Bake the cookies for 10-15 minutes at 190 degrees until slightly darkened.
Remove the cookies and leave them for 15 minutes to cool down. Gingerbread cookies are ready!
